Blurt: Throw What You Got in the Pan Hash
Do you know the feeling when you’re hungry, you don’t feel like cooking, you want something quick and you open the fridge and don’t know what to fix? That’s exactly how I felt last night as I was looking for something to prepare. I wanted to make sure I was eating healthy but I knew I was pretty hungry so I was ready to eat a lot. Well, that’s when I fix my Throw What You Got in the Pan Hash. It is a really simple recipe but does sometimes require some imagination. Most of the ingredients you should keep on hand for a healthy diet, you can find a complete guide to a healthy grocery list here. Here is the basic recipe and afterward I offer some suggestions for substitutions based on what you have on hand.
Ingredients:
1 pound Ground Turkey 1 can mixed vegetables 1 can green beans 1 can sliced potatoes 1 can diced tomatoes 1 cup diced or chopped onions 1 cup sliced red and/or green bell pepper Pepper, Season Salt, Rosemary, and any other seasoning you like to tasteDirections:
In a large skillet spray with non-stick cooking spray and brown ground turkey on a med high heat. Turn heat down slightly and add all vegetables and let simmer for 8-10 minutes stirring occasionally. Season while stirring to taste.Substitutions and Variations:
You can use canned tuna or canned chicken instead of ground turkey. Usually I will just use one can or two depending how many people I am serving. Also, when I use tuna or canned chicken I usually add a little mustard for taste. You can add mustard to the above for a change of taste. If I have leftovers of chicken breast or vegetables I usually will cut those up and throw those in as well. You can use any vegetables you like canned, fresh or frozen. The main thing is to pick veggies you like and lots of them because they are very nutritious, have little calories and are filling. I use the leftovers to make open-faced sandwiches on wheat bread or use as a filling for a wrap the next day for making myself a healthy lunch.

Turkey-Mushroom Casserole.
Combine leftover chopped turkey with condensed cream of mushroom soup, chopped onion, canned or leftover veggies,1 small package of fast-cooking rice and 2 1/2 cups of liquid (water, milk and/or broth). Bake at 350 degrees in a casserole dish until rice is tender and the liquid is absorbed.
Substitute leftover chicken or beef in place of the turkey if you wish and load up on your favorite veggies for a nutritious and satisfying meal.

That recipe sounds good. I would use brown or whole grain rice. Is that okay? I will give it a try. I usually have those items on hand.
