Blurt: Healthy Chicken Salad Wrap Recipe

Yesterday after carving my pumpkin I was too tired to cook and I am staying away from fast food and pizza delivery so I decided to make some chicken salad wraps. This is an easy recipe to make, doesn’t require many ingredients and is low in calories. I usually make enough to yield four wraps at a time but you can adjust the recipe to make more.

Ingredients:

  • 4 - Whole wheat wraps or pita bread
  • 2 - 4oz Boneless Skinless Chicken Breasts (each breast will yield two wraps)
  • 1/4 cup Fat-free Yogurt or 1 ½ Tbsp Low-fat Mayonnaise
  • 1/8 cup Dill Pickle Relish
  • 1/2 Medium-sized Vidalia Onion diced
  • 1 tsp Mustard
  • Cooking Spray

Directions:

  • Preheat oven to 400°F
  • Spray baking dish with cooking spray and bake chicken breasts for approximately 45 minutes until done. (Internal temperature above 165°F - No pink on the inside)
  • Cut chicken into 1/4 to 1/2 inch chunks
  • Combine Chicken, Mayo or Yogurt, Relish, and Onion in a small bowl and toss thoroughly.
  • Spread Chicken salad on wraps, fold over the sides and roll the wrap closed or spread inside pita bread.

Variations:

  • Add diced celery
  • Add diced carrots
  • Add seedless grapes
  • Add a splash of lemon
  • Use a flavored Fat-free Yogurt
  • Serve with Homemade Baked Potato Chips, you can find the recipe in my article, Blurt: It’s Snackin’ Time. Just cut the bake time down to 25 minutes or until the potato wedges begin to turn a golden brown.
